Berry Stuffed French Toast is a fruity, creamy, and indulgent breakfast recipe that combines macerated berries with a sweet mascarpone mixture and thick slices of French bread.
This Stuffed French Toast Recipe is one of those recipes that takes breakfast to a whole new level.
The sweetness of the cheese and tartness of the berries combine perfectly between buttery golden french toast to make your mouth water and your stomach growl.
What Is Stuffed French Toast?
It’s exactly what it sounds like. Usually, a soft cheese like cream cheese, Neufchâtel, or Mascarpone is combined with sugar and heavy cream.
This mixture is then spread and sandwiched between pieces of bread which are then dipped in an egg wash and cooked.
This particular recipe uses Mascarpone and adds macerated berries to the filling. However, if you prefer cream cheese or Neufchâtel, either of those will work in this recipe too.
What’s the Difference between Cream Cheese, Neufchâtel, and Mascarpone?
These cheeses are all very similar in terms of consistency. The richness and flavor vary slightly, but they are all delicious.
Cream Cheese – American origins with 33% milk fat and 55% moisture. Tangy, rich, and creamy.
Neufchâtel – French origins with 23% milkfat. Slightly less rich in flavor than cream cheese and slightly granulated in texture.
Mascarpone – Italian origins with 65-70% milkfat. Made with double or triple cream, very buttery and rich in flavor.
How To Make It:
This is a simple recipe to make, but it does require several steps and a bit of prep.
Begin by combining the berries, honey, and triple sec/citrus juice in a small bowl.
Let them macerate for about an hour. If you want a lot of extra berries for the top, double the recipe or you can use fresh berries on top.
Once the berries have been macerated, in a medium-sized bowl whisk the eggs, vanilla extract, milk, flour, and salt together and set aside.
In a separate bowl, using a hand or stand mixer, whip the Mascarpone cheese, sugar, and heavy cream together until fluffy.
Cut French bread into approximately 12, 1 1/2-inch thick slices, then slice them in the center but don’t cut all the way through.
Use a rubber spatula or knife to spread some of the cheese mixture on one side of the inner slit of each slice of bread.
Using a spoon, scoop the macerated berries holding them to the side of the bowl to let them drain a little, then scoop them into the cheese stuffed french toast.
Quickly dip each side of the bread in the egg mixture and place it in a preheated and buttered skillet or griddle. Repeat this step for the rest of the french toast.
Over medium-low heat, each side is cooked until golden brown and the filling starts looking gooey, about 2 to 3 minutes per side.
Make sure to add butter as needed.
How To Serve:
- Spoon some of the macerated berries and juice or fresh berries over the top.
- Drizzle with maple syrup which adds a whole other level of depth to this beautiful dish.
- Top with Homemade Whipped Cream, powdered, sugar, and anything else you heart desires!

Ingredients
- 1 cup strawberries fresh or frozen
- 1/2 cup raspberries fresh or frozen
- 1/2 cup blueberries fresh or frozen
- 1/4 cup honey
- 4 tablespoons Triple Sec*
- 1 loaf French bread
- 2 large eggs
- 1/2 cup whole milk
- 1/4 all-purpose flour
- 1 teaspoon vanilla extract
- 8 ounces Mascarpone cheese
- 1/2 cup granulated sugar
- 3 tablespoons heavy cream
- 2 tablespoons butter
- 1/4 teaspoon kosher salt
Topping Ideas
- maple syrup
- powdered sugar
- whipped cream
- butter
- additional berries
Instructions
- Combine the berries, honey, and triple sec in a medium bowl. Let them macerate for about an hour. If you want a lot of extra berries for the top, double the recipe or you can use fresh berries on top.
- Once the berries have macerated, beat the eggs, vanilla, milk, flour, and salt together in a medium bowl and set aside.
- In a separate bowl, using a hand or stand mixer, whip the Mascarpone cheese, sugar, and heavy cream together until fluffy.
- Cut French bread into approximately 12, 1 1/2-inch thick slices, then slice them in the center but don't cut all the way through.
- Use a rubber spatula or knife to spread some of the cheese mixture one of the inner slit of each slice of bread.
- Using a spoon, scoop the macerated berries holding them to the side of the bowl to let them drain a little, then scoop them into the french toast slit on top of the cheese mixture.
- Quickly dip each side of the bread in the egg mixture and place it in a preheated and buttered skillet or griddle. Repeat this step for the rest of the french toast.
- Cook over medium-low heat until golden on both sides and filling becomes melty. Make sure to add butter as needed.
- Spoon some of the macerated berries and juice over the top and drizzle with maple syrup.
Notes
- Nutritional Information is based on 2 slices per serving and does not include toppings.
- Feel free to use any combination of berries as long as the total amount of berries equals 2 cups.
- Triple Sec may be omitted if you would prefer to keep this recipe alcohol-free or don’t have any on hand. Instead, you can use lemon or orange juice.
