Harry Potter Butterbeer Muddy Buddies are made with rice Chex cereal, butterscotch, butter, toffee, and powdered sugar for a sweet and delicious snack!
A fun twist on my Classic Muddy Buddies recipe this Butterbeer version takes this highly addictive dessert recipe to a whole new level!
My butterbeer muddy buddies are sweet and buttery and topped with a toffee crunch and lightning bolt sprinkles.
The key to this recipe is the imitation butter flavoring/extract. I know, I know. But seriously — it really brings out the BUTTER in butterbeer.
I love making Muddy Buddies because they are so easy (and so addictive)! They make a great treat around the holidays and I love coming up with fun new flavors!
How To Make Butterbeer Muddy Buddies

Measure the cereal into a large paper bag.

In a medium microwave-safe bowl, melt the butterscotch chips on 50% power for 30-seconds then stir and repeat in 15-second increments until the chips are melted and smooth. Do not overcook or the butterscotch will scorch!
- In a small bowl, melt the butter in the microwave until fully melted. Whisk into the butterscotch along with the vanilla and butter flavoring.

Dump the butterscotch mixture into the brown paper bag with the cereal and the Toffee Bits and shake to coat! Spread on a cookie sheet and allow to cool for 20 minutes.

Add the mixture back into the bag (you may need a new bag if the first one is too buttery), and add the powdered sugar. Shake again to coat. Serve, sprinkled with lightning bolt sprinkles!

Butterbeer Muddy Buddies
Ingredients
- 8 cups Rice Chex cereal
- 12 ounces butterscotch chips
- 1/2 cups salted butter cubed
- 1 teaspoon vanilla extract
- 1 teaspoon imitation butter extract/flavor1
- 1/4 cup Heath Bits O Brickle Toffee Bits

Notes
- Caramel flavoring may be used instead of butter if you can't find it.

So I typically read the reviews before I make something. Naturally this time I did not…oops. The butterscotch and butter mixture did not work well at first. I put it in my stand mixer and mixed it on high, (slow at first because of the liquid) then I put it in the microwave for 30 seconds and mixed it again. I didn’t double the recipe so I just used the Chex mix bag it came in since it was just shy of a whole box. I used the inside at first then I rinsed the outside and used it inside out when I did the powdered sugar. It was a little nerve racking with the mixture but just get it warm again! I’ll add some blue sprinkles because my daughter wants a Ravenclaw birthday party but it is perfect and I’m excited for it. I won’t add as much powdered sugar next time and to keep the mess down I’m going to sift it before serving. But thank you for the recipe!

First time making for our upcoming Harry Potter movie-watching Halloween party.
I read all the reviews here and because of all the commented trouble mixing the chips/butter I DID decide to use the double-boiler method. I added chips, butter, vanilla and butter flavoring to the bowl and just patiently stirred while it melted away.
To finish the melt off, I did use a whisk to better incorporate the ingredients.
Double-boiler for the WIN! 👍🏼
And it turned out so yummy!
I doubled the recipe, which called for 3 c powdered sugar but honestly, I found 2 full cups was plenty enough.
Love the “mix in paper bag” method too (using 2 bags due to the buttery deliciousness!)
No problem with the crunch of the Chex as someone mentioned 🤷🏻

Did the butter and butterscotch melt and it was a lumpy mess. Threw it out and melted 3/4 bag of butterscotch with 4 cubes of vanilla bark. Added 1/8 of the butter extract. It was perfect. The bark let the butterscotch stick to the Chex without being sticky. Only used about 1/4 cup of powdered sugar – could have used more but didn’t want the mess.

This looks so good and I want to make it for the Harry Potter book club I’ve just started. I have a vanilla-butter emulsion already – do you think that would work in place of the imitiation butter flavoring?

It should, yes.

You can’t add any liquid to melted chips (of any flavor) because the chips will seize up. Have to add the chips to the melted butter or melt them together.

This was amazing for our Harry Potter night. It was delicious and addictive! I will say my butterscotch and butter mixture became clumpy as well, so we put it back in the microwave for 10-15 seconds and it smoothed out a bit. Other than that, the recipe was very easy to make!

I was so excited to try this! But the butterscotch seized as soon as I added the melted butter. I was really disappointed since I followed the recipe to a T. I guess I will try again with a double boiler.

If you are near a Michael’s , or a Jo Ann’s store, or any store that sells cake decorating supplies, they should have the butter flavoring.

I also have had trouble with mixing the butterscotch chips with the butter. As soon as I add the butter, the butterscotch starts to congeal into clumps. Do you think the butter needs to cool before I add it? Maybe the hot butter is “scorching” the melted butterscotch?

LLLOOOOOOVE this but anyone else have the problem with it being soggy?? My cereal has ZERO cruch even with the toffee added at the end and i had to use 2x or 3x as much powered sugar to coat.

I am a Huge Harry Potter Fan, and My Step-Daughter knew I would like to try this. I made it tonight. It turned out Amazing! I picked everything up last minute, except the sprinkles. I couldn’t find imitation butter extract though, so I used real extract. I don’t know if there’s much of a difference, but it still came out great in my oppinion

I really liked this recipe, but I did make a couple changes to make it more butterbeer like, at least to my taste. The first change was I added 2t of caramel flavor, this is the only thing I feel it was missing. The second thing I did was just to add the Heath bits before coating in powdered sugar. When I tried the other way I just ended up with a bunch of Heath in the bottom is the bag. Changing the order allows the Heath to stick to the Chex before being coated with sugar.

Try the good old fashioned way. On the stove in a double boiler. Melt the butter first then add the chips.

I used my double boiler to melt the butterscotch chips. Worked great. Then added the melted butter. Mind you I can’t find imitation butter?

Hey there! I have tried a couple times to make this, and am determined to get it, but I keep having issues with the butterscotch getting clumpy, and not mixing with the butter. I tried at a lower temp, and letting things cool a smidge and still no dice.
Have you tried this at all with adding a little peanut butter? Do you think this would work?

Hi Brie, Is sounds like you are overcooking the butterscotch chips. Your microwave might be stronger than the one I used to test the recipe. Are you using 50% power on your microwave? If you’re using full power, try starting with 15 seconds and then do 10-second intervals stirring between each one. Butterscotch chips hold their shape really well even when technically melted so you have to stir them often to melt properly without overcooking. The clumps you’re seeing are from the butterscotch seizing.
I have not tried adding peanut butter together this recipe, although that’s how my regular muddy buddies are made.

Instead of microwaving the chips, use a double boiler (boiling pot of water with a glass bowl on top, put the chips and butter in the glass bowl to melt), the set up helps control the temperature so you won’t have any issues with over cooking or burning.

I’ve made this recipe a few times now and I have a lot of trouble getting the butter and the melted butterscotch chips to become homogenous. The butter stays separate and the butterscotch makes big sticky clumps when mixed with the cereal. Any tips?

Hi Amber, the butter and butterscotch should mix together, you don’t want to add them to the mix if they are still separate. Sometimes with these types of recipes, it can be hard to troubleshoot because of the power of different microwaves. I would try melting the butter and butterscotch separately and then whisking them together after they are both melted. This can help you make sure the butterscotch isn’t overcooking, which is usually what causes the clumping.

I’ve also updated the recipe to reflect this change. I’ve made it both ways but I think by melting them separately it gives you more control, it just means more dishes 🙂
