This Funfetti Cookie Recipe takes just 5 minutes to whip up before chilling! For this recipe, all you need is Betty Crocker Rainbow Chip Cake Mix or Funfetti Cake mix, vegetable oil, and vanilla extract.
Once the dough has been chilled you’ll then roll the dough balls in granulated sugar or if you prefer, sprinkles! You could also add some white chocolate chips to the cake batter for a touch of chocolatey sweetness!
This cake mix cookie recipe can easily be adapted to a variety of cake mixes! You could try yellow cake mix, white cake mix, or even chocolate cake mix with peanut butter chips added to the batter!
How To Make Funfettie Cake Mix Cookies
- Beat together the cake mix, vegetable oil, eggs, and vanilla in a large bowl. Then chill the dough for 45 to 60 minutes.
- Roll the dough into balls and drop each one in the bowl of sugar. Roll the ball in the sugar to coat and then place them on a prepared baking sheet.
- Bake until the cookies are puffy and slightly underdone.
- Cool the cookies on the baking sheet before transferring them to a wire rack to cool completely.

Funfetti Cake Mix Cookies
Ingredients
- 1 (15.25oz.) box Rainbow Chip Cake Mix or funfetti
- ⅓ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup granulated sugar for coating
Instructions
- Add the cake mix, vegetable oil, eggs, and vanilla to a large bowl or stand mixer fitted with a paddle attachment and beat until combined. The dough will be fairly sticky
- Chill the dough for 45 to 60 minutes.
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Use a medium cookie scoop to portion out the dough and drop it in the bowl of sugar, then roll the ball in the sugar to coat and place on the prepared baking sheet at least 2 inches apart.
- Bake for 8 to 9 minutes. Do not over bake these cookies, they will look puffy and slightly underdone, but they will finish cooking on the baking sheet after coming out of the oven.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
