When I have a bag of apples on hand that needs to be used up I also whip up some Apple Fritters or my Apple Fritter Monkey Bread! Both sweet treats take only 15 minutes of hands-on time!

This Easy Apple Fritter Bread Recipe is broken down into four quick parts, which are all made with common baking ingredients. First, the bread batter, then the apple mixture, followed by a spiced brown sugar mixture, and lastly, the sweet glaze!
To make the batter, you’ll grab granulated sugar, vanilla extract, baking powder, and all-purpose flour from the pantry. The bread batter is then completed with the additions of softened salted butter, large eggs, Greek yogurt, and whole milk.
Once the batter is made, the apple mixture is up next! Granny Smith apples are peeled and diced before getting a coating of light brown sugar and ground cinnamon.
While I personally reach for granny smith apples for this recipe, there are others that would work well, too! Honeycrisp, Braeburn, Pink Lady, Gala, and Fuji all have great flavor and a good texture that would hold up well in this bread.
Now that the batter and apple mixture are ready, next is the spiced brown sugar mixture. For this light brown sugar, ground cinnamon and granulated sugar are whisked together.
With all three parts ready, the bread is then assembled and baked to delicious perfection! While it cools, you’ll prepare the sweet vanilla glaze by combining powdered sugar, heavy cream, and vanilla extract.
How To Make Apple Fritter Bread
- Beat the salted butter and granulated sugar together using a mixer until smooth. Then add in the eggs one at a time.
- Add in the vanilla extract, baking powder, and all-purpose flour. Mix until blended, being careful not to overmix the batter.
- Mix in the Greek yogurt and milk gently. Then, set this aside.
- Stir together the light brown sugar and cinnamon that will be used to coat the apples. Set this aside.
- Mix together the spiced sugar topping by stirring brown sugar, ground cinnamon, and granulated sugar. Set this bowl aside as well.
- Peel the apples and then dice them up before adding them to the brown sugar and cinnamon mixture.
- Pour half of the batter into the prepared loaf pan and then top with half of the apple mixture.
- Sprinkle with the spiced sugar topping. Then, swirl a knife through the layers.
- Repeat the layers for a second time with the remaining batter, apple mixture, and spiced brown sugar mixture. Again, swirling the layers with a knife.
- Bake the Apple Fritter Loaf until a toothpick inserted into the center comes out clean.
- Whisk the glaze ingredients together while the loaf cools on a wire rack. Then drizzle the loaf with the glaze and enjoy!

Ingredients
Cake Batter
- ½ cup salted butter softened
- ⅔ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ cup Greek yogurt
- ¼ cup whole milk
Apple Mixture
- 2 medium apples granny smith – about 2 cups
- ½ cup light brown sugar packed
- 1 teaspoon ground cinnamon
Brown Sugar – Cinnamon Mixture
- ¼ cup light brown sugar packed
- ½ Tablespoon ground cinnamon
- 1 teaspoon granulated sugar
Glaze
- 1 cup powdered sugar
- 3 Tablespoon heavy cream or milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F. Prepare a 9×5-inch loaf pan by spraying it with non-stick spray.
- In a large bowl, cream together ½ cup salted butter and ⅔ cup granulated sugar until smooth.
- Then, beat in the 2 large eggs, one at a time, mixing after each addition and scraping down the sides of the bowl.
- Mix in 1 teaspoon vanilla extract.
- Fold in 1½ cups all-purpose flour and 1 teaspoon baking powder. Mix only until blended – do not overmix.
- Add ½ cup Greek yogurt and ¼ cup whole milk into the batter and gently mix just until smooth. Set this aside.
- Peel and dice 2 medium apples. Add the diced apples to a bowl with ½ cup light brown sugar and 1 teaspoon ground cinnamon and stir to coat.
- In a separate bowl, stir together ¼ cup light brown sugar, ½ Tablespoon ground cinnamon, and 1 teaspoon granulated sugar and set this aside.
- Pour half of the batter into the prepared loaf pan. Then layer on half the apple mixture and sprinkle half of the brown sugar and cinnamon mixture on top of the apple layer. Gently swirl a knife through the layers.
- Then repeat the layers one more time: batter, apple mixture, and end with the brown sugar and cinnamon mixture. Then, use a knife to swirl through the layers again.
- Bake the loaf for 50 minutes or until a toothpick or cake tester inserted into the middle comes out with no batter sticking to it. If it's not done after 50 minutes, add 5 minutes and check again. If the loaf starts getting dark on top before the loaf is fully baked, tent the loaf with a piece of tin foil over the top to protect it from burning.
- When the loaf is removed from the oven it needs to cool for at least 30 minutes before you add the glaze so that istdoesn't soak into the top.
- While the loaf is cooling, prepare the glaze by whisking together 1 cup powdered sugar, 3 Tablespoon heavy cream, and 1 teaspoon vanilla extract until smooth. Can I use ‘canned’ Apple Pie Filling instead of Apples? If so, how much ‘canned’ Apple Filling?

I wouldn’t. Apple pie filling has a lot of syrup and moisture that will prevent the bread from not turning out properly.

The apple cinnamon sugar mixture part is confusing. One place it says add apples to cinnamon sugar, then it says to add apples and end up with the cinnamon sugar mixture, (with no apple added)
