What Makes This Chicken So Juicy?
The secret to Juicy Chicken 101 is found in the cooking method. That doesn’t mean it’s hard to accomplish, though. Literally, anyone can make this chicken recipe!
The cooking process starts by searing the breasts. This cooking technique creates a delicious, browned crust on the meat and locks in juices and flavor. This is done in an oven-proof skillet over medium-high heat for about 4 to 5 minutes.
Searing the chicken traps in the moisture, holding all the juiciness and flavor on the inside while it continues to bake in the oven.
Since the juicy results are found in the cooking method, that means you can mix up the flavoring! I tend to use much more seasoning than what the recipe itself calls for.
However, I wanted you to start with a reasonable season base that allows you to add more as desired. Therefore, feel free to add as much as you’d like to get a nice red color.
Juicy Chicken Ingredients
- boneless skinless chicken breasts
- garlic salt
- paprika
- lemon pepper seasoning
- garlic powder
- avocado oil
How To Make Juicy Chicken 101
- Preheat the oven to 400°F.
- Pat the chicken breasts dry with a paper towel.
- Combine the spices together to create the seasoning mixture, and generously rub it all over the chicken cutlets.
- Add avocado oil to a large oven-proof skillet (such as cast iron) and heat over medium-high heat. Add the chicken and sear one side for 4 to 5 minutes to get a nice crust before flipping the breasts and immediately transferring the pan to the oven to finish cooking.
- Bake until the internal temperature reaches 165°F. The cooking time may vary depending on the thickness of the breast.
- Allow the chicken to rest for a few minutes before serving.
- Thickness – Try choosing a package of chicken that has breasts as similar in size as possible. That way, they will finish cooking at the same time without causing any to be over or undercooked. You could also use a kitchen mallet to pound the breasts out to a similar thickness. This will give the batch of breasts similar cooking times while also giving them a more even cook.
- Searing – It’s important that you only sear one side of the chicken breasts while cooking them on the stovetop. When you flip the chicken over, you want to transfer the pan into the oven immediately. The pan will continue to sear the second side in the oven. The breasts will overcook and dry out if you sear both sides on the stovetop before transferring the chicken to the oven.
- Internal Temperature – Since chicken breasts come in all different sizes, you’ll want to double-check for doneness. To do this, insert a kitchen thermometer (this is an affiliate link to our favorite one) into the thickest part of one of the breasts. Once the internal temperature reads 165 degrees F, the juicy chicken is safe for eating!
- Resting – You’ll want to eat this chicken immediately, but don’t! Instead, give the chicken a few minutes to rest on the pan before serving. This allows the chicken to absorb juices from the pan, resulting in juicy, moist chicken!

Juicy Chicken 101 FAQs
Try rubbing the chicken with a bit of avocado oil before seasoning. The oil will help the seasonings to adhere better to the meat.
Since avocado oil is meant for high-heat cooking and olive oil is not, I would recommend using avocado oil for the best results. However, if olive oil is all you have, then go ahead and use it!

Juicy Chicken 101
Ingredients
- 1 pound boneless skinless chicken breasts about 2 breasts
- 1 teaspoon garlic salt sea salt or seasoned salt may also be used
- 1 teaspoon paprika
- 1 teaspoon lemon pepper seasoning
- ½ teaspoon garlic powder
- 2 tablespoons avocado oil
Instructions
- Preheat the oven to 400°F.
- Pat 1 pound boneless skinless chicken breasts dry with a paper towel. Combine 1 teaspoon garlic salt, 1 teaspoon paprika, 1 teaspoon lemon pepper seasoning, and ½ teaspoon garlic powder in a small prep bowl and then rub the seasoning mixture all over the chicken cutlets. Make sure to generously season the chicken, feel free to add more seasoning if desired.
- Add 2 tablespoons avocado oil to a large oven-proof skillet (such as cast iron) and heat over medium-high heat. Add the chicken and sear one side for 4 to 5 minutes to get a nice crust before flipping the breasts and immediately transferring the pan to the oven to finish cooking.
- Bake for 13 to 15 minutes or until the internal temperature reaches 165°F. The cook time may vary depending on the thickness of the breast.
- Allow the chicken to rest for a few minutes before serving.
Notes
- Feel free to pound the breasts out for a more even cook.
- If desired, you can rub the chicken with avocado oil before seasoning, but you should still add some to the pan.
- Using avocado oil is important because it’s meant for high heat, but olive oil is not.
- You want to transfer the pan immediately to the oven after flipping the breast because the pan will continue to sear the second side in the oven. You do not need to sear it on the stovetop, or it will overcook and dry out.
- If making with chicken cutlets, which we often do, you only need to sear for 3 to 4 minutes, then flip and bake for about 10 minutes. They will cook faster since they are thinner.
