Rebecca’s Recipe Review
Taste: Robust and herby!
Texture: Crunchy, not too much dressing.
Ease: 7/10 – not hard, but a multi-step process and longer prep than typical potato salads.
Pros: Crunchy texture and BIG flavor!
Cons: Prep and cook time. Some may also not like the dill flavor, but it can be reduced or omitted to taste.
Would I Make This Again? Yes! This is recipe definitely up there on my list of favorite summer side dishes!
Ingredients For TikTok Potato Salad
You’ll need a few pounds of Yukon Gold baby potatoes to start making this viral TikTok recipe. These will be cooked twice, first in boiling water with salt, paprika, and baking soda.
The salt and paprika get a head start on infusing the potatoes with flavor as they boil while the baking soda will increase the crispiness the potatoes’ cris[iness when baked in the oven. Before baking, the smashed potatoes are drizzled with avocado oil and sprinkled with sea salt and cracked black pepper.
When the potatoes are getting their second cook in the oven I prepare the homemade dressing. The base is made of a mixture of mayonnaise and Skyr, which is an Icelandic yogurt with a smooth thick texture that’s perfect in this dressing.
If you prefer, you can swap Skyr out for your favorite plain Greek yogurt. As for the mayo, I love using avocado or kewpie mayo when making this salad, but again, use your favorite!
Dijon mustard, red wine vinegar, lemon juice, garlic paste, and paprika are mixed into the mayo and yogurt base to begin building up the flavor. Then finely chopped fresh parsley, chives, and dill are added to bring a powerhouse of fresh herb flavor!
Rounding off the dressing is chopped cooked bacon and chopped celery stalks!
How To Make TikTok Crunchy Potato Salad Recipe
A full recipe card with step-by-step photos and ingredient quantities for this popular side dish recipe can be found at the end of the post. Leave a comment if you try it or have any questions about this unique recipe!
- Preheat the oven to 425 degrees F.
- Add salt, paprika, baking soda, and water to a large pot and bring it to a boil. Then add the Yukon gold baby potatoes and continue to boil until the potatoes are fork tender.
- Line two large baking pans with parchment paper and drizzle them with avocado oil.
- Drain the cooked potatoes and transfer them to the prepared baking sheets. Stir the potatoes around the baking pan to coat them in the avocado oil.
- Smash each baby potato using the bottom of a cup or bowl.
- Drizzle with more avocado oil and top with sea salt and cracked black pepper.
- Transfer the baking sheets of smashed potatoes into the oven and roast until they become golden brown and crisp.
- Prepare the potato salad dressing by stirring together mayonnaise, plain Skyr, Dijon mustard, red wine vinegar, lemon juice, garlic paste, and paprika in a large bowl.
- Chop up fresh parsley, fresh chives, and fresh dill. Reserve a teaspoon of each for garnish, and then add the rest to the mayo mixture.
- Cook and chop up bacon into bits, reserving some for garnish and then mix the rest into the dressing.
- Cut the ends off of the celery, slice them down their centers, and then dice them up. Add the chopped celery to the dressing bowl.
- Cut the smashed potatoes into pieces and then allow them to cool before adding them to the mayo mixture.
- Reserve some of the smaller crispy bits of potato to use as garnish along with the reserved bacon and herbs.
Ultra Crispy Potatoes – Takes a good 45 to 60 minutes to obtain the right texture.
Baking Soda – Adding this to water helps increase the crispiness of the potatoes.
Avocado Oil – This has a higher smoke point than olive oil, and because this roasts at 425, there’s a chance olive oil could smoke.
Enjoy Fresh – The potatoes will absorb the dressing over time, making them less crispy and the salad drier.
How To Store Smashed Potato Salad
Since this Smashed Baked Potato Salad is made with crispy potatoes, I recommend serving it as fresh as possible. This way you can enjoy all the crispy texture and crunch that this salad has to offer!
That said, I’d suggest making and serving this homemade potato salad the same day it’s made. Leftovers can then be stored in the fridge for up to 2 days, however, keep in mind the salad will lose quite a bit of its crisp texture.

I devoured this potato salad, so much better than the boring ones I’m used to having at BBQs! My husband thought it could do with a little less dill, but I didn’t mind it!
