With September upon us, you may be in need of some new snack recipes as the kiddos go back to school. Maybe you’re helping out at a bake sale, maybe you want to make a batch for your kid’s class, or maybe you just want to whip up a tasty treat for after school!
In any case, these crowd-pleasing cookies will certainly fit the bill.
The base of this recipe is a delicious chocolate chip cookie made with a packet of instant pudding. This makes the texture light and fluffy so the cookie remains soft, moist, and totally irresistible.
But that’s not all! These scrumptious Stuffed Cookies are made with a chewy caramel in the middle for a mouthwatering caramel and chocolate treat.
Yep, that tasty surprise center really elevates your typical chocolate chip cookie — or any cookie, for that matter!
What Are Stuffed Cookies?
Stuffed cookies are made with an extra ingredient in the middle for a scrumptious “surprise.” It’s usually a simple recipe addition, but it makes your basic cookie extra craveable!
In the case of these Caramel Stuffed Cookies, soft caramels are wrapped in each ball of cookie dough. When they’re baked, the cookie flattens, the caramel melts, and the result is a sweet and gooey center.

How Do You Make Caramel Chocolate Chip Cookies?
- begin by creaming together the butter and sugars until smooth.
- Then add the dry pudding mix, eggs, additional egg yolk, and vanilla and beat for about one minute on medium speed.
- In a separate bowl, whisk together the flour, baking soda, and salt. Add dry ingredients to the wet ingredients and mix until just combined.
- Fold in chocolate chips with a rubber spatula.
- Scoop out 1½ – 2 tablespoon-sized scoops and stuff a caramel into the center of each, working the dough around it to seal. If using long thin caramels, cut in half before inserting into the dough.
- Place cookie dough balls on the prepared cookie sheet about two inches apart. Bake for 11 to 13 minutes.

- Peanut Butter – Use my Peanut Butter Chocolate Chip Cookie recipe as the base, then stuff with caramels.
- Salted Caramel – Add flaky sea salt to the tops of the cookie dough balls before baking.

Caramel Stuffed Chocolate Chip Cookies
Ingredients
- ½ cup unsalted butter room temperature
- ¼ cup granulated sugar
- ¾ cup light brown sugar
- 1 (3.4 oz.) box Instant Vanilla Pudding Mix dry
- 2 large eggs
- 1 additional egg yolk
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon kosher salt
- 1 cup semi-sweet chocolate chips
- ½ cup mini chocolate chips
- 36 chewy caramels
Instructions
- Preheat oven to 350°F and line a cookie sheet with parchment paper and set aside.
- Cream the butter and sugars together until smooth.
- Add the dry pudding mix, eggs, additional egg yolk, and vanilla and beat for about one minute on medium speed.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Add dry ingredients to the wet ingredients and mix until just combined.
- Fold in chocolate chips with a rubber spatula.
- Scoop out 1½ – 2 tablespoon-sized scoops and stuff a caramel into the center of each, working the dough around it to seal. If using long thin caramels, cut in half before inserting into the dough.
- Place cookie dough balls on the prepared cookie sheet about two inches apart. Bake for 11 to 13 minutes.
- Allow the cookies to cool on the pan for a couple of minutes before transferring to a cooling rack.
Notes
- I used both Werther’s and Lancaster Caramels. Both worked fine but I liked the Lancaster more.

Cookies turned out VERY sweet. Is it necessary to include the pudding mix? I found that it really increased the sweetness, and also just made the cookies taste like packaged pudding. 🙁 If I made something along these lines again, I’d try using a regular chocolate chip cooking recipe and add the caramel to the center.

I’m sorry you didn’t enjoy the cookie recipe. Pudding in cookies is very common as it helps to keep the cookies soft and chewy. Using instant pudding is key and I don’t normally notice the pudding taste but it helps a lot with the texture.
