The best part is that you don’t even have to cook the noodles, they’ll soften up after a few minutes thanks to the oil and vinegar!
It’s loaded up with broccoli slaw, craisins, sunflower seeds, and sesame seeds. It makes for a really great side dish at a summer party or as a light lunch, add chicken too if you want!

Can I make this and refrigerate over night
Rebecca Hubbell says
You can but know that the noodles will get really soft and lose their crunchiness.

Simple and delicious. The hardest part is breaking up the ramen noodles. I’ll be sure to make this one again. Thanks.
Rebecca says
So glad you enjoyed it, Ginger! I usually break the ramen noodles up in the bag with a rolling pin or meat tenderizer and gently pound them until crushed.
Katie says
Can this be refrigerated for a while or should it be served immediately?
Rebecca says
Yes, you can refrigerate it!

I just made this and it seems very bitter and “vinegary”. Will it sweeten up as it rests? Should I add more sugar?
Rebecca says
Hi Kelly,
It shouldn’t be super bitter, you’ll definitely get a zing from the vinegar, but it should be slightly sweet too. Definitely try mixing in a few more tablespoons of sugar to see if that helps. What kind of vinegar did you use?
Jackie says
What is in Broccoli Slaw?
Rebecca says
It’s a mix of broccoli, cabbage, and carrots, I believe. Green Giant sells it as a pre-packages mix.
Sandy says
Have had this salad at dsummer outings but never got the recipe. Thank you.

Darcey says
Couple of (silly) questions…. You don’t cook the Ramen, right? And do you use the seasoning packets in the Ramen or just the noodles? Thanks!
Rebecca says
Hi Darcey, I’ve updated the recipe to be a little more clear. But you are correct, you don’t cook the noodles and you DO add the seasonings.
Darcey says
