This Strawberry Frosting is so easy to make with just 3 ingredients. It’s a light, fluffy, and delicious pink frosting you can use on cupcakes, cakes, and more!
Strawberry Frosting
This is the time of year where it becomes especially hard to find fresh strawberries, especially this year since it’s been so cold across North America. But it’s also almost Valentine’s Day and that means there will be a million uses in just a few weeks for this Strawberry Frosting.
I love classic strawberry buttercream made with freshly pureed berries, but that isn’t always a possibility. This Strawberry frosting is super easy to make and whips up in just 5 minutes.
This Strawberry frosting is made with three ingredients: heavy cream, powdered sugar, and strawberry jello mix. You can make it either in a stand mixer with a whisk attachment or in a large bowl with a hand mixer.
Since this is a whipped cream based frosting, it’s light and fluffy and is best served the day it’s made. It can be used on cakes, cupcakes, and also makes a great milkshake topping!

Oh my goodness! This was amazing!
I was looking for a raspberry lemon cake recipe I could make for my partner for his birthday. Everything I was finding was super complicated and overwhelming. Some, the cake would have five stars, but the frosting would have three. I knew of this site from before and wanted to see if there might be a less overwhelming option here. I was so excited to find the raspberry lemon cake Rebecca has listed on here, but it didn’t have a frosting, so I searched for frostings and found this one.
Winging it entirely, I bought raspberry jello instead of strawberry and I juiced the lemons I had zested for the cake (maybe four or five small lemons) and added that to the mixture. The flavor was phenomenal. It reminded me of Flintstone push up pops from when I was a kid. It was also insanely easy to make and really took off a lot of the pressure I was feeling. It was pretty messy, but may have faired better had I allowed my cake to cool better or if I had chilled the frosting after beating it.
Absolutely will be keeping this in my recipe box!

Isn’t it gritty? Does the jello really break down with cold cream?
Rebecca Hubbell says
Yes, the jello dissolves and the frosting is smooth.

very tasty and pretty colour. A little messy looking but good. I’m wondering if this icing would have to be refrigerated.
Donna Coates says
YES!!!! It’s dairy. Definitely refrigerate unless you’re serving immediately.

Can I use store bought cool whip, I don’t have heavy cream and the store was out
🙁
Rebecca Hubbell says
Not to make frosting exactly like this but I have seen people use yellow to flavor cool whip so it would probably work but I wouldn’t whip it too much because you’ll deflate the cool whip.

Can cupcake with this frosting be frozen?
Rebecca Hubbell says
I have not tested it but I’m not sure it would thaw well with the added condensation.

Can I frost cupcakes the night before?
Rebecca Hubbell says
This frosting is best used the day it is made.
Linda says
Does the cake need to be kept in the fridge since it’s made with heavy cream?
Rebecca Hubbell says
Yes, it does.
Sherry says
Why adding the powder sugar.i would think that the jello would make it sweet enough
Rebecca Hubbell says
It’s for sweetness and stabilization.
