These Eggnog Ricotta Pancakes are fluffy and full of holiday flavor!
Happy Monday! And it should be a happy one as most of us have a short week thanks to the holiday! I’m really not sure how Christmas is just a few short days away. I feel like I am both ahead and behind and if you were to ask me to explain that to you… well, I probably can’t. But I can explain the amazingness that is these Eggnog Ricotta Pancakes!
I LOVE ricotta pancakes! I made them for the first time almost a year ago with these Orange Ricotta Pancakes and I’ve been addicted ever since! I can’t help but dream up new flavors to bring you like some Key Lime Ricotta Pancakes are totally coming your way at some point… don’t those sound heavenly? But we’re not looking for zesty vibrancy just yet, we want the cozy, sweet flavors of the holidays. And eggnog is just the thing!
I know so many people who aren’t a huge fan of eggnog, but as I mentioned in my Eggnog Cheesecake post, I love the stuff! But for some, like my husband, who don’t mind the taste but can’t quite get over the whole “egg” aspect, there’s Silk Nog! It’s both egg and dairy free, but still hits the spot when you’re craving that creamy and delicious holiday drink. But why stop with drinking it? Why not make pancakes! These pancakes are rich and flavorful with a hint of spice! Top them with butter, maple syrup, and whipped cream for a cozy winter breakfast!
Ingredients
- 2¼ cup all-purpose flour
- 4 tbsp granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1/4 tsp nutmeg
- 1 1/4 cup Silk Nog
- ½ cup ricotta cheese
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and nutmeg.
- In a separate bowl, stir together nog, ricotta, eggs, and vanilla
- Add wet ingredients to dry ingredients and stir until just combined. Batter should be a bit lumpy, do not overmix.
- Spray griddle or large pan with cooking spray and heat on medium heat.
- Use a ½ cup measuring cup to pour batter onto hot cooking surface.
- Cook for 1½ - 2 minutes until edges start to bubble, flip and cook the other side for about a minute until side is golden brown.
- Remove from pan, top with butter and syrup and whipped cream!
