This Non-Alcoholic Saint Patrick’s Day Drink is loaded with fruity flavor and followed up with a bit of a ginger bite to make a delicious drink! It’s then decked out in fun garnishes to push the festive feel for this March holiday!
To transform this mocktail from ordinary to magical, it’s made with a secret ingredient that gives it a frothy finish and a velvety smooth mouthfeel. If you guessed an egg white, you’re correct! Don’t worry—you can’t even tell by taste or texture that there’s an egg white in your drink!
If you just can’t stomach an egg white, I totally understand and have provided a substitute option so that you can still enjoy this St. Patrick’s Day Mocktail!

St. Patrick’s Day Mocktail Ingredients
Though this Pot Of Gold Mocktail has a longer list of ingredients, the result and presentation make the extra effort worth it! To start this St Patrick’s Day Mocktail Recipe, you’ll need 100% orange juice, 100% pineapple juice, and preferably fresh-squeezed lime juice, though you could also use Nellie & Joe’s Key Lime Juice.
We then add an egg white and powdered sugar to achieve a frothy top and velvety smooth mouthfeel, ginger beer for a bit of a bite, and Angostura bitters. Disclaimer: Though Angostura bitters technically contain alcohol, it’s such a small amount added to this mocktail that a recipe made with vanilla extract actually contains more alcohol than this drink.
However, if you prefer, you can leave Angostura bitters out and though it’ll be slightly different it will still make for a delicious drink.
To bring the Saint Patrick’s Day fun to this Gold Mocktail, grab an orange, fresh mint leaves, and Airhead Extremes Belts Rainbow Berry Candy for garnishing.

Are Egg Whites In Cocktails Safe?
While consuming raw egg whites is never 100% safe the safety of it has drastically increased. In the last 20 years regulations have increased relating to hygiene and poultry vaccinations to help curb the risk of bacteria.
This, in turn, has brought bartenders back to incorporating egg whites into popular cocktails. Use pasteurized eggs and follow additional safety tips for using egg whites in drinks.
However, if egg whites in this St. Patrick’s Day Drink turn you off, it can be swapped out for what’s called Collins Bar Sugar and Foamer.
Egg White vs Bar Sugar
Both the egg white and bar sugar can be used to achieve the frothy, velvety mouthfeel with this mocktail. However, for those who don’t prefer to consume raw egg whites, the bar sugar will be the safest choice to eliminate potential bacteria.
Bar Sugar is a blend of superfine sugar, powdered egg white, and powdered milk that, if used in this recipe, will replace both the egg white and powdered sugar.
To replace the egg white, use 2 tablespoons of Collins bar sugar. This ingredient can be found at most liquor stores as well as some supermarkets near the cocktail mixers. You can also buy Bar Sugar on Amazon.
How To Make A Pot Of Gold Drink

- Combine orange juice, pineapple juice, fresh lime juice, a large egg white, powdered sugar, and Angostura bitters in a cocktail shaker. Dry shake the mixture.
- Add ice and shake again.
- Strain the frothy mixture into a chilled glass with fresh ice.
- Top off with ginger beer and stir.
- Garnish with a citrus wheel, fresh mint, and an Airhead Extremes Belts Rainbow Berry Candy. Serve with a straw and enjoy!
- Orange Juice – For the best tasting Saint Patrick’s Day Drinks, I suggest using a high-quality orange juice that is not from concentrate. Uncle Matt’s or Natalie’s orange juice are both high-quality, great-tasting options that I prefer to reach for.
- Strain The Mocktail – Use a Hawthorne Strainer or Fine Mesh Sieve Cocktail Strainer to strain the mocktail into the serving glass. This will catch any pulp from the orange juice or bits of egg white that weren’t incorporated to ensure a velvety, smooth mouthfeel when sipping.
- Mocktail to Cocktail – To turn this mocktail into a cocktail I’d suggest using Irish whiskey. However, white or gold rum, gin, or vodka would also work.
How To Store
Unfortunately, this St. Patrick’s Day Mocktail can’t really be stored to enjoy later or made ahead of time since the foam will deflate and the ginger beer will go flat.
How To Serve A Pot Of Gold Mocktail
To serve the best St. Patrick’s Day Drinks I really recommend going out all when garnishing this yellow drink! Slide a citrus wheel onto the rim of the mocktail glass, place a sprig of fresh mint in the glass near the citrus, and then use a cocktail pick to poke through an Airhead Extremes Belts Rainbow Berry Candy to make it look like a rainbow.
Then serve the festively garnished mocktail up with more St. Patrick’s Day Recipes! You can’t go wrong with a batch of Irish Coffee Cookies, a slice of Beer Bread, or even a couple dozen Pot of Gold St Patrick’s Day Cupcakes!
However, if you’d like to enjoy a mocktail after a classic Irish dinner then I’d suggest a pot of Classic Irish Beef Stew that’s made with Guinness or a plate of Corned Beef and Cabbage!

Pot of Gold Drink (St. Patrick’s Day Mocktail)
Equipment
- Cocktail Shaker
- Jigger or measuring cup
- citrus press
- Bar Spoon
Ingredients
- 3 ounces orange juice I like Natalie's Orchard or Uncle Matt's brands
- 2 ounces pineapple juice
- ½ ounce fresh lime juice or Nellie & Joe's Key Lime Juice
- 1 large egg white see notes
- 2 tablespoons powdered sugar
- 2 dashes Angostura bitters see notes
- ice
- 2 ounces ginger beer I like Fever Tree brand
- 1 citrus wheel for garnish
- 1 sprig fresh mint
- 1 Airhead Extremes Belts Rainbow Berry Candy
Instructions
- Add 3 ounces orange juice, 2 ounces pineapple juice, ½ ounce fresh lime juice, 1 large egg white, 2 tablespoons powdered sugar, and 2 dashes Angostura bitters to a cocktail shaker.
- Dry shake vigorously for 20 to 30 seconds.
- Add ice and shake for another 15 seconds.
- Then, strain the frothy mixture through a Hawthorne Strainer or Cocktail Strainer into a glass and add more fresh ice if desired.
- Top off with 2 ounces ginger beer and stir with a bar spoon.
- Slice a slit in the 1 citrus wheel and slide over the rim of the serving glass.
- Slap 1 sprig fresh mint in your palms and add to the glass near the citrus.
- Add 1 Airhead Extremes Belts Rainbow Berry Candy to a cocktail pick, poking it through both ends of the strip to make it look like a rainbow, and place it in the glass with the other garnishes.
- Serve with a straw.
Notes
- If you prefer not to use raw egg white in drinks, you can use 2 tablespoons of Collins bar sugar as a substitute for both the egg white and powdered sugar. Collins bar sugar can be found at most liquor stores and some supermarkets near the cocktail mixers.
- If serving in a shorter glass, you may want to cut a slit in the Airhead Extreme Belt and slide it over the straw to help hold it in place for appearances.
- The ginger beer is strong; you can add more if you prefer a bit more bite in your drinks, but we felt this ratio was well-balanced.
- If using bar sugar, you’ll shake WITH ICE from the start. Large ice cubes help the bar sugar froth a bit better, but nugget ice cubes look more like pieces of gold. We tested with both kinds of ice, and even the lesser foam was fine and still delivered the mouthfeel we were going for, so I personally prefer the nugget ice.
- Technically, Angostura bitters does contain alcohol, but you add such a small amount that a recipe made with vanilla extract contains more alcohol than this drink. You can omit it if desired, and the drink will still be delicious but just a little different.
