These Pumpkin No Bake Cookies are such an easy fall dessert recipe!
If you’ve seen or made any of my no-bake cookie recipes before, you know they hold a special place in my heart. Probably more than any other dessert because no-bake cookies are what mama always made me.
It’s funny, though, because I’ve still never posted my recipe for classic no bake cookies, I should really get on that, eh? But these Pumpkin No Bake Cookies are a real treat!
And today’s no bake cookie recipe is far from a classic, it’s a fall twist on the traditional cookie we all know and love with a seasonal flavor we can’t get enough of this time of year! Pumpkin Spice!
And trust me, you won’t be able to get enough of these cookies either!
How To Make Them:
- Add butter, sugar, milk, and vanilla to a large pot and bring to a boil.
- Keep on a rolling boil for 2 minutes.
- Remove from heat and stir in remaining ingredients.
- Once fully combined, plop large spoonfuls onto wax paper.
- Let set for about an hour until firm.
It’s a small batch recipe, only yielding about a dozen good-sized cookies, and sometimes I think it’s good to have a recipe on hand that doesn’t make a ton.
Especially since you’re going to want to eat all of them and they can be quite dangerous for the waistline.
And I definitely probably shouldn’t be eating them a week before I leave for Jamaica, but they’re wicked good and it’s too late to shed the pounds so I’m just going to enjoy the sugar now and embrace the soft stomach and sun next week!
Plus, there are only so many weeks where it’s acceptable to indulge in all things pumpkin and how could I resist these chewy, soft, sugary, Pumpkin No Bake Cookies! Bottom line, I can’t, they’re addictive.
And I love how easy they are to make, sure they take a little time to rest and cool, but in the meantime, you can like the spoon and scrape down the sides of the pan for all the good stuff to tide you over while you wait 😉
I’ve found the Jell-O Pudding mix at my local grocers (check the seasonal food display at Walmart). But you can also order it on Amazon. To show you just how easy these Pumpkin No Bake Cookies are to make, I’ve included a video! Share this video on facebook or pin this post to save this recipe for later! Or you know, just go make it right now!

John Hutchinson says
I am going to try these, after I get the ingredients. I think it would be fun to add pumpkin M&M’s to the mix when adding the oatmeal. You could also add raisins or dried cranberries.
Rebecca Hubbell says
Absolutely! Love the idea of fun additions!
Kandi says
I saw this recipe and wanted to try it but sadly my store is not yet carrying the pumpkin pie spice pudding. So I improvised and used caramel pudding and apple pie spice. Haven’t tried them yet but they look and smell delicious!
Rebecca says
Such a fun flavor combo, let us know how they turn out! I hope you get a chance to try the pumpkin soon!
Kathy Knowlton says
Is there a way to download this recipe?
Rebecca says
Hi Kathy, there is a print option in the recipe card.
Kari says
Can this be made with Splenda
Rebecca says
Hi Kari, I don’t use sugar alternatives personally, so I’ve never tried it. But you could give it a shot and see, and let us know how it turns out so other readers can know if it works or not.

I’m all about no bake!
Judy says
Can you use a different favor of pudding? Like chocolate
Rebecca says
Hi Judy, you could, but then they wouldn’t be pumpkin flavored.
Marge says
Could you publish the nutritional information, these sound wonderful but I need to know the nutritional facts before I can eat them due to health reasons.
Charlotte says
What is the serving size for the nutritional info? Please don’t tell me it’s for 1 cookie! Yikes!
Rebecca Hubbell says
Hi Charlotte, the recipe makes 12 cookies, 1 cookies is a serving. No Bake Cookies are notoriously high in sugar and calories.

Amanda says
What purpose does the coffee creamer serve? How much will it change the outcome if I omit it, in your opinion?
Rebecca says
Hi Amanda, this was the base recipe I came up with to create no bake cookies without peanut butter, so the creamer and jello pudding act as the adhesive for the cookies. You could try it without but I can’t say how it would turn out.
Bonnie Evans says
Look so good ….gonna try it soon
Vera says
Can you use sugar in the raw as a substitute?
Rebecca says
Hi Vera, I’m honestly not sure, it has larger granules and might dissolve at a different rate than granulated sugar. You could try using something like Zulka pure cane sugar as a happy medium, it’s fine like traditional sugar.
Megan @ MegUnprocessed says
Beautiful photography.

I learned from a 44-year veteran cook many years ago how to make no bake cookies. She told me to add the vanilla after the 2 minute boil so that it would not evaporate from the mixture. It was an important step in the recipe. I can’t wait to try these!
Fonda Masters says
Yes I agree. Been cooking probably for at least 35 years and I’ve always put it in later because that’s how I was taught. I’m sure it would still work just that it would not be as strong of flavor.
Deb says
Hmm I don’t think I’ve ever send Pumpkin Spice Pudding mix before. I hope I can find it.
Also the video shows you using powered coffee creamer but the written says “? milk”. Can you use powdered milk instead of coffee creamer? (Actually I don’t have either one but I know I won’t be coffee creamer ever).
Rebecca says
Hi Deb, The Pumpkin Spice pudding mix is a seasonal item, but can be found at most major grocers in the US this time of year. The recipes uses both liquid milk and powdered coffee creamer, I’ve never made it with powdered milk in place of the coffee creamer so I’m not sure how it would turn out. I have used white chocolate hot chocolate mix though and that works great if that’s easier to find.
Pam says
Do you think almond milk would work? I’m gluten and dairy free.
Rebecca says
Hi Pam, I would think so since this doesn’t actually bake, but I can’t say for certain.
Pauline says

Miranda says

Thanks so much, Miranda! They are one delicious cookie that’s for sure!
Danielle McCoy says
What is the recipe? I don’t see it anywhere, just the video but that doesn’t tell me measurements 🙂
Rebecca says
Ah, thanks so much for pointing this out so I could fix it, Danielle! Looks like there was a coding error on the back end, but it’s all fixed now and the recipe is there for your enjoyment! 🙂
