This Raspberry Lime Rickey Recipe is a sweet, tart, and oh-so refreshing drink made with lime juice, raspberry simple syrup, and club soda.
This mocktail is a family favorite and you can add a splash of gin if you want it spiked for the adults!
Originating in the 1800s, the Raspberry Lime Rickey became a popular soda fountain beverage and is still a nostalgic favorite. It’s a great drink to sip during humid New England summers when you’re craving something refreshing.
While it’s often served as a mocktail, especially at fairs and carnivals, you can spike it with gin, too!
Ingredients
- Lime juice – For a tart, citrusy zing. I prefer squeezing fresh lime juice for this recipe.
- Raspberry simple syrup – Simple syrup is easier to mix into cold drinks than granulated sugar since sugar would have a hard time dissolving. Use my homemade Raspberry Simple Syrup recipe for the best flavor!
- Club soda – This makes the drink fizzy and helps dilute the sweetness of the syrup.
Want a more aromatic drink? Use a lime or raspberry seltzer instead of club soda in the recipe.
How To Make A Raspberry Lime Rickey
Step 1: Fill a glass with ice cubes. Add in lime wedges and raspberries, then pour in the lime juice.
Step 2: Add in the raspberry syrup.
Step 3: Top with soda for a bubbly finish and serve with a straw.

Ingredients
- ice
- 1 ounce lime juice
- 2 ounces raspberry simple syrup
- 5 ounces club soda
- lime wedges for garnish
- raspberries for garnish
Instructions
- Fill a medium glass most of the way with ice.ice

- Make It Frozen: Simply add all the ingredients to a blender along with one cup of ice and blend until slushy.

Can this be made as a batch for 20 people?

Hi Gary, yes, it could. You’d need to make a double batch of the raspberry simple syrup, then do 20 ounces of lime juice and 3 liters of club soda.
