This RumChata Malibu Lime and Soda Cocktail is a simple 4-ingredient drink that’s insanely tasty and perfect for summer! With a blend of coconut and lime that’s both sweet and refreshing and goes down easy!
I officially declare the RumChata Malibu Lime and Soda the new drink of summer! Every now and then a drink goes crazy on social media (last summer it was the Corona Sunrise) and this deliciously fruity recipe is the latest one to grab people’s attention.
TikTok star and bartender michellebellexo shared this recipe a few weeks ago after a customer ordered it at the bar. And well, it went viral with the video already over 19 million views and 2 million likes! Many seemed skeptical of the combo of the ingredients, so I decided to try it for myself and its pure tropical deliciousness!
Between this and Dirty Soda, I’d say the world is crushing on creamy fizzy drinks right now!
Ingredients Notes
Sweet Malibu coconut rum and RumChata cream liqueur are brightened up by sweetened lime juice and bubbly club soda in this gorgeous white cocktail. Garnish with a lime wedge for a simple finish.
Make sure to use a bottled sweetened lime juice or lime cordial like Rose’s and NOT fresh lime juice since the high acid could cause the cream of the RumChata to curdle.
Many are calling this RumChata Drink Recipe an alcoholic Italian Soda, if you like those then you’re bound to love this recipe! I’d also recommend this for anyone who enjoys fruity drinks, especially Coladas! It tastes similar to a Key Lime Pie, but with a coconut twist.
How To Make It
Making this Rumchata Malibu Lime and Soda recipe is really simple. You’ll add the RumChata, Caribbean Rum, and lime juice to a cocktail shaker with ice. Shake then strain into tall glasses filled with ice and top off with club soda.
If you want to skip the shaking, go ahead and pop your liqueur and club soda in the fridge at least an hour before making. Once chilled you can add everything to a glass with ice and stir.
What’s It Called?
This mixed drink doesn’t seem to have an official name, hence why I’m calling it Rumchata Malibu Lime and Soda (a bit long, eh?). It would have been convenient if it did and a few commenters on TikTok have recommended a few of their own.

How To Order It At A Bar
Since it isn’t a common or well-known drink and doesn’t have a name, ask for equal parts Malibu and RumChata in a glass with lime juice and filled with soda water.
Recipe Variations:
- Add Fireball to make it taste like an adult Horchata.
- Add orange juice to make it taste like an orange creamsicle.
- Add pineapple juice for a Pina Colada flavor.

Equipment
- Cocktail Shaker
Ingredients
- Ice
- 1½ ounces RumChata
- 1½ ounces Malibu Coconut Rum
- ¾ ounce sweetened lime juice or lime cordial
- 4 ounces club soda
- lime wedge for garnish
Instructions
- Add Ice, RumChata, Malibu, and lime juice to a cocktail shaker and shake for 15 seconds.
- Strain into a tall glass filled halfway with ice and top off with club soda.
- Garnish with a lime wedge and serve with a straw.
Notes
- Make sure to use sweetened lime juice for this recipe and not fresh-squeezed. The high acidity of the fresh juice can cause the RumChata to curdle.

Is there something similar to this I could do that I can make by the “pitcher” full for a party? This probably wouldn’t be ideal because of the Rumchata.

I think if you were to serve this in a punch bowl where the ingredients are frequently getting mixed it would work okay.

Citric acid and cream.
Not ideal….
Leave out the killer and enjoy the Malibu and rum chata and drink it fast. Lol
Cream liqueur is not good for mixing with much more than coffee. But Malibu is pretty weak as well so can get away with. Just saying.

This sounds yummy, and I’ve made it a couple times, following the recipe as written using the proper lime juice, Rose’s, however the drink still curdled.
I will attempt to make this without the Rose’s Lime juice to see if that makes a nice tasting difference.

There will be some noticeable separation due to the carbonation from the soda and different densities of the ingredients and the rumchata makes it easier to see it. Starbucks pink drinks have a similar look after sitting for a few minutes. Curdle would be if there were clumps that are unpleasant to sip, is this what’s happening?
